Ingredients

  • 10 Medjool dates, pitted (about 3/4 cup or 180 g, packed)
  • 1 tablespoon coconut oil, melted
  • 2 tablespoons water
  • 1/4 cup unsweetened cacao powder or cocoa powder, plus more for rolling
  • 3/4 teaspoon vanilla extract
  • 1 1/2 tablespoons cashew butter
  • 1 pinch fine sea salt
  • 1/2 to 3/4 cup almond flour (5684 g)

Instructions

  1. Line a small plate or shallow dish with parchment paper and set aside.
  2. In a food processor, combine the pitted dates, melted coconut oil, and water. Blend until a thick paste forms with minimal chunks.
  3. Add the cacao powder, vanilla extract, cashew butter, and sea salt. Blend until smooth and well combined.
  4. Gradually add almond flour in 1/4-cup increments, blending after each addition, until the mixture forms a soft dough that pulls away from the sides and holds together.
  5. Using a tablespoon or small scoop, portion the mixture and roll into balls between your palms. If sticky, lightly dust your hands with cacao powder.
  6. Place truffles onto the parchment-lined plate. Repeat with remaining mixture to make about 16 truffles.
  7. Optionally roll truffles in extra cacao powder for a richer finish and less sticking.
  8. Enjoy immediately or chill in the freezer for 30 minutes to firm up before serving.
