Ingredients

  • 500 g dark chocolate (minimum 70% cocoa solids), finely chopped
  • 250 ml fresh heavy cream
  • 1 tablespoon unsweetened cocoa powder (for dusting)

Instructions

  1. Finely chop the dark chocolate and place it in a heat-resistant bowl.
  2. In a small saucepan, heat the cream over medium heat until it just begins to simmer (do not boil).
  3. Pour the hot cream over the chocolate and let it sit for 1 minute.
  4. Stir gently until the mixture becomes smooth and glossy.
  5. Line an 18–20 cm round cake pan with parchment paper on the bottom and sides.
  6. Pour the ganache into the pan and smooth the top with a spatula.
  7. Cover and refrigerate for at least 3 hours, or until fully set.
  8. Invert the chilled cake onto a serving plate and remove the parchment.
  9. Dust the top with unsweetened cocoa powder before slicing and serving.
