Ingredients

  • 1 teaspoon instant coffee powder
  • 1 cup warm water
  • 1/4 cup honey
  • 1 tablespoon instant coffee powder
  • 2 teaspoons water or prepared coffee
  • 1216 Marie biscuits (tea or butter biscuits)
  • 1 tablespoon cocoa powder (optional, for garnish)

Instructions

  1. In a bowl, dissolve 1 teaspoon instant coffee powder in 1 cup warm water. Set aside to cool.
  2. In a separate bowl, whip the honey with a hand mixer on high speed for 7–8 minutes until thick, pale, and creamy.
  3. Add 1 tablespoon instant coffee powder and 2 teaspoons water (or prepared coffee) to the whipped honey. Beat for another 3–4 minutes until fluffy and smooth.
  4. Spoon a thin layer of the whipped mixture into the bottom of dessert cups.
  5. Quickly dip a biscuit into the prepared coffee (1–2 seconds) and place over the cream layer.
  6. Spoon a small amount of coffee over the biscuit for extra moisture.
  7. Spread another layer of whipped coffee mixture on top.
  8. Repeat layers until cups are filled, finishing with a smooth cream layer.
  9. Dust with cocoa powder if desired.
  10. Refrigerate for at least 1 hour before serving.
