Ingredients

  • 1 cup coconut sweetened condensed milk
  • 3 large eggs
  • 1/2 cup full-fat canned coconut milk
  • 1/3 cup low-carb granulated sweetener
  • 2 cups unsweetened finely shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or line with parchment paper.
  2. In a large bowl, whisk together coconut sweetened condensed milk and eggs until smooth.
  3. Add coconut milk and sweetener. Whisk again until fully combined.
  4. Stir in shredded coconut until evenly distributed.
  5. Pour the mixture into the prepared baking dish and smooth the top.
  6. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
  7. Let cool completely before slicing. For best texture, refrigerate for at least 1 hour before serving.

Notes

  • Chill thoroughly before slicing for clean bars and optimal texture.
  • Add a pinch of cinnamon or cardamom for extra flavor.
  • Use sugar-free chocolate chips or a caramel drizzle for a dessert upgrade.
  • Do not use sweetened coconut—bars will be too sweet and less structured.
  • These bars are best served cold or at room temperature.
