Ingredients
- 12–15 puff pastry sheets (5x5 inches), thawed
- 12 oz cooked, shredded chicken breast
- 2 tablespoons salted butter
- 2 tablespoons all-purpose flour
- 1–2 teaspoons yellow mustard
- 1/2 teaspoon kosher salt (adjust to taste)
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon garlic powder
- 3/4 to 1 cup milk (whole or 2%)
- 1 large egg, lightly beaten (for egg wash)
Instructions
- In a sauté pan over medium heat, melt butter. Add flour, garlic powder, and black pepper. Whisk and cook for 75 seconds.
- Add mustard and whisk to combine. Slowly pour in 3/4 cup of milk while whisking constantly. Simmer until thickened.
- Stir in shredded chicken and salt. Add more milk if needed to reach creamy consistency. Taste and adjust seasoning. Let mixture cool completely.
- Cut puff pastry sheets diagonally into triangles. Place 1 tablespoon of cooled filling on one triangle, fold over to seal, and crimp edges with a fork.
- Place filled pastries on a parchment-lined tray. Chill for 45–60 minutes, or freeze until solid for later use.
- Preheat oven to 375ºF (190ºC). Arrange pastries on a baking sheet and brush tops with beaten egg.
- Bake for 25–30 minutes (add a few minutes if baking from frozen), until puffed and golden brown. Serve warm.
Notes
- Make sure the filling is fully cooled before filling the pastry to avoid soggy bottoms.
- Flash-freeze unbaked pastries and store for up to 3 months; bake straight from frozen.
- Add grated Parmesan for a cheesy version or use mushrooms for a vegetarian option.
- Reheat baked pastries in oven or air fryer at 300–325ºF for 5–10 minutes until crisp.
