Ingredients

  • 2 chicken breasts, cut into 1-inch strips
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • 2 cups mixed greens (lettuce, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • ½ red onion, thinly sliced
  • 2 tbsp extra-virgin olive oil (for dressing)
  • 1 tbsp lemon juice
  • Salt and pepper, to taste (for dressing)

Instructions

  1. In a bowl, toss chicken strips with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  2. Preheat air fryer to 200°C (400°F).
  3. Arrange chicken strips in a single layer in the air fryer basket. Cook for 10–12 minutes, flipping halfway, until golden and cooked through.
  4. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  5. In a small bowl or jar, whisk or shake together olive oil, lemon juice, salt, and pepper until emulsified.
  6. Drizzle dressing over the salad and toss gently to coat.
  7. Top salad with hot, crispy chicken strips and serve immediately.
