Ingredients

  • 1 medium eggplant, sliced into 1/4-inch rounds
  • Olive oil spray, as needed
  • 3/4 cup plain breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)

  • 1/2 teaspoon dried basil

  • 1 cup marinara sauce

Instructions

  1. Slice the eggplant into 1/4-inch rounds. Optionally sprinkle with salt and let sit for 10–15 minutes to draw out moisture, then pat dry.
  2. In a shallow bowl, mix breadcrumbs, Parmesan (if using), garlic powder, oregano, basil, salt, and black pepper.
  3. Lightly spray both sides of each eggplant slice with olive oil.
  4. Press each slice firmly into the breadcrumb mixture, coating both sides evenly.
  5. Preheat the air fryer to 375°F (190°C).
  6. Arrange slices in a single layer in the air fryer basket without overlapping. Lightly spray the tops with olive oil.
  7. Air fry for 17–20 minutes, flipping halfway through, until golden and crispy.
  8. Spoon marinara sauce onto each slice and top with shredded mozzarella.
  9. Return to the air fryer for 1–2 minutes until cheese is melted.
  10. Serve warm, optionally garnished with fresh basil or extra Parmesan.
