Ingredients

  • 8 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1½ cups sharp cheddar cheese, shredded
  • 2 green onions, finely chopped
  • ½ cup sour cream

Instructions

  1. Wash and scrub the potatoes thoroughly, then pat dry.
  2. Preheat the air fryer to 400°F for 5 minutes.
  3. In a small bowl, mix olive oil with garlic powder.
  4. Place whole potatoes in the air fryer basket. Brush with oil mixture and season with salt and pepper. Flip and repeat.
  5. Air fry at 400°F for 35 minutes, flipping halfway through, until fork tender.
  6. Let potatoes cool on a wire rack until easy to handle.
  7. Slice each potato in half lengthwise and scoop out most of the flesh, leaving about ¼ inch of potato attached to the skin.
  8. Brush the inside of each skin with olive oil and season lightly.
  9. Return to the air fryer and cook at 400°F for 5–7 minutes, until crisp.
  10. Sprinkle shredded cheese over each skin and cook for another 3–4 minutes until cheese is melted and bubbly.
  11. Remove from air fryer, top with sour cream and green onions, and serve immediately.
