Ingredients

  • For the steak bites:
  • 1 lb (450 g) sirloin or ribeye steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the chimichurri:
  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons red wine vinegar
  • 1/2 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  1. In a bowl, mix steak cubes with olive oil, garlic, paprika, salt, and pepper. Marinate for 15 minutes at room temperature.
  2. Preheat air fryer to 400°F (200°C) for 3 minutes.
  3. Place steak in a single layer in the basket. Cook for 4 minutes, shake the basket, then cook 4 minutes more or until desired doneness.
  4. While steak cooks, combine chimichurri ingredients in a food processor or bowl and mix until well combined but still textured.
  5. Let steak bites rest 1–2 minutes, then serve with chimichurri drizzled on top or on the side.

Notes

  • Don’t overcrowd the air fryer for even browning.
  • Add lemon juice to chimichurri for brightness.
  • Use tenderloin for an even more tender texture.
  • Chimichurri can be made ahead and stored chilled.
