Ingredients

  • 1½ cups cooked and mashed chickpeas or black beans
  • ½ cup grated carrots
  • ½ cup finely chopped bell peppers
  • ¼ cup chopped onions
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley or cilantro
  • ½ cup breadcrumbs or rolled oats
  • 1 tsp ground cumin or paprika
  • Salt and black pepper to taste
  • Olive oil spray for air frying

Instructions

  1. In a large bowl, mash the chickpeas or black beans until mostly smooth.
  2. Add grated carrots, chopped bell peppers, onions, garlic, and herbs. Stir to combine.
  3. Mix in the cumin or paprika, salt, and pepper. Add breadcrumbs or oats and stir until the mixture holds together.
  4. Let the mixture rest for 10–15 minutes if time allows. Then form into 6 equal-sized patties.
  5. Preheat the air fryer to 375°F (190°C).
  6. Lightly spray the air fryer basket with olive oil and arrange the patties in a single layer.
  7. Air fry for 10–12 minutes, flipping halfway through, until both sides are golden and crispy.
  8. Let cool slightly before serving with your favorite sauces or sides.
