Ingredients

  • 2 medium zucchini (about 1 pound / 450 g), thinly sliced (1/8 inch thick)
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Using a mandoline or sharp knife, slice the zucchini into thin rounds about 1/8 inch (0.3 cm) thick for even cooking.
  2. Lay the slices on paper towels and gently pat dry to remove excess moisture.
  3. Preheat the air fryer to 325°F (162°C) for a few minutes.
  4. In a medium bowl, toss the zucchini slices with olive oil, sea salt, and black pepper until evenly coated.
  5. Arrange the slices in a single layer in the air fryer basket without overlapping. Cook in batches if necessary.
  6. Air fry for 8 to 12 minutes, flipping halfway through. Begin checking at 8 minutes and remove slices as they turn golden brown and crisp.
  7. Allow the zucchini chips to cool for several minutes to continue crisping before serving.

Notes

  • Slice zucchini evenly and thinly (1/8 inch) for best crisping results.
  • Avoid overcrowding the basket to prevent steaming.
  • Patting the slices dry is essential for achieving crisp texture.
  • Chips will continue to crisp as they cool.
  • Store fully cooled chips in an airtight container at room temperature for up to 1 to 2 weeks.
