  • 2 cups heavy whipping cream

Instructions

  1. Preheat oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. In a clean, grease-free bowl, whisk egg whites with cream of tartar until foamy. Gradually add granulated sugar and continue beating until stiff, glossy peaks form. Fold in vanilla and almond extracts.
  3. In a separate bowl, sift together almond meal and powdered sugar. Gently fold into meringue mixture without deflating.
  4. Pipe or spread three 8-inch circles of meringue onto each prepared baking sheet. Smooth tops evenly.
  5. Bake for 25 minutes, then rotate pans and bake an additional 15–20 minutes until lightly golden and set. Cool completely on racks.
  6. Chill a mixing bowl and whisk, then beat heavy cream with powdered sugar and vanilla until medium peaks form.
  7. To assemble: layer meringue and whipped cream, finishing with cream on top. Chill for at least 2 hours before slicing and serving.
