Ingredients

  • 2 cups whole milk
  • 3 large eggs
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg (plus extra for topping)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Heat milk in a saucepan until hot but not boiling, then remove from heat.
  3. Whisk eggs, sugar, vanilla extract, and salt until combined.
  4. Slowly pour warm milk into the egg mixture while whisking continuously.
  5. Strain the mixture through a fine sieve for a smooth texture.
  6. Pour into ramekins or a baking dish.
  7. Place dishes in a larger pan and add hot water halfway up the sides.
  8. Sprinkle nutmeg on top.
  9. Bake for 40–50 minutes until set but slightly jiggly in the center.
  10. Remove from water bath and cool before serving.
