Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 lb (450 g) ground beef or ground turkey
  • 1 (14.5 oz / 411 g) can diced tomatoes
  • 1 (10.75 oz / 305 g) can cream of mushroom soup
  • 1 (10.75 oz / 305 g) can cream of chicken soup
  • 4 cups frozen mixed vegetables (carrots, peas, corn, green beans)
  • 3 cups cooked egg noodles or pasta of choice
  • 1 cup shredded cheddar cheese, divided
  • Salt and pepper, to taste
  • Chopped fresh parsley (optional garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef or turkey with the onion and garlic until browned. Drain excess fat.
  3. In a large bowl, combine the meat mixture with diced tomatoes, cream of mushroom soup, cream of chicken soup, frozen vegetables, cooked noodles, and half of the cheddar cheese. Season with salt and pepper.
  4. Transfer mixture into the prepared baking dish and spread evenly.
  5. Top with the remaining cheddar cheese.
  6. Bake uncovered for 25–30 minutes, or until hot and bubbly with melted, golden cheese on top.
  7. Garnish with chopped parsley if desired and serve warm.
