Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup canola oil
  • 1 cup granulated sugar
  • 1 cup confectioners’ sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, beat butter, canola oil, granulated sugar, and confectioners’ sugar until smooth and creamy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and cream of tartar.
  5. Gradually mix the dry ingredients into the wet mixture just until a soft dough forms.
  6. Drop dough by small teaspoonfuls onto ungreased baking sheets, spacing 2 inches apart.
  7. Bake for 8 to 10 minutes, or until the edges are lightly golden.
  8. Transfer cookies to wire racks to cool completely before serving or storing.

Notes

  • Use both butter and oil for flavor and lasting softness.
  • No chilling needed—this dough is ready to bake right away.
  • Add a slice of bread to your storage container to keep cookies soft longer.
  • Try mixing in sprinkles or drizzling with glaze for variation.
  • Freeze leftovers for up to 3 months; thaw at room temperature before serving.
