Ingredients

  • Topping:
  • ¼ cup quick‑cooking oats
  • 1 tablespoon brown sugar
  • 1 tablespoon melted butter
  • ¼ teaspoon ground cinnamon
  • Muffin Batter:
  • 1 ½ cups quick‑cooking oats
  • 1 ½ cups all‑purpose flour
  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsweetened applesauce
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 apple — peeled, cored, and chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Grease or line a 12‑cup muffin pan with paper liners.
  2. In a small bowl, mix together the topping ingredients: oats, brown sugar, melted butter, and cinnamon. Set aside.
  3. In a large bowl, whisk together the oats, flour, brown sugar, cinnamon, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk together the applesauce, milk, oil, egg, and vanilla extract until well combined.
  5. Pour the wet mixture into the dry ingredients and stir just until moistened.
  6. Fold in the chopped apple until evenly distributed.
  7. Spoon the batter into the prepared muffin cups, filling each about two‑thirds full.
  8. Sprinkle the oat topping evenly over each muffin.
  9. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let muffins cool slightly in the pan before removing to a wire rack.

Notes

  • Use quick-cooking oats for a soft texture, or rolled oats for a heartier bite.
  • Replace applesauce with Greek yogurt or mashed banana for variation.
  • Add chopped nuts or raisins for extra texture and flavor.
  • Store with a paper towel in the container to absorb moisture and keep muffins from getting soggy.
  • Use whole wheat flour for added fiber and nutrition.
