Ingredients

  • 1 small apple, peeled and chopped into 1-inch pieces

  • 30g unflavored protein powder
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup milk (dairy or plant-based)
  • 1/4 cup plain Greek yogurt
  • 1 large egg
  • 1 tablespoon butter, melted and cooled
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Place chopped apple in a microwave-safe dish, cover, and microwave for 2–3 minutes until softened. Drain and set aside.
  2. In a bowl, whisk together flour, protein powder, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, Greek yogurt, egg, melted butter, maple syrup, and vanilla until smooth.
  4. Pour the wet ingredients into the dry and stir until just combined (a few lumps are okay).
  5. Toss cooked apple pieces lightly in a bit of flour, shake off excess, and fold them into the batter.
  6. Let the batter rest for 5–10 minutes.
  7. Preheat a greased skillet or griddle over medium heat.
  8. Drop 1/4-cup portions of batter onto the skillet. Cook until bubbles form and edges look set, then flip and cook until golden and cooked through.
