Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup cold buttermilk (or ¾ cup milk + 1 tsp vinegar)
  • 2 cups apples, peeled and diced (Granny Smith or Honeycrisp)
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons unsalted butter
  • ½ cup powdered sugar
  • 1 to 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs.
  3. Pour in buttermilk and stir just until a soft dough forms.
  4. Transfer dough to a floured surface and pat into a ¾-inch thick rectangle. Cut into 1½-inch pieces.
  5. In a saucepan over medium heat, combine diced apples, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and butter. Cook 5–7 minutes until apples soften and sauce thickens. Remove from heat.
  6. Arrange biscuit pieces in baking dish and spoon apple filling evenly over them.
  7. Bake uncovered for 30–35 minutes, until biscuits are golden and filling is bubbling.
  8. For glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm biscuits if desired.

Notes

  • Add chopped pecans or walnuts to the filling for crunch.
  • Substitute buttermilk with milk + vinegar if needed.
  • Make filling ahead of time to save prep time.
  • Serve with ice cream for a dessert option.
