Ingredients

  • 4 slices sourdough bread (about 60 g each)
  • 2 ripe avocados (about 300 g total)
  • 250 g fresh mushrooms (button or cremini), sliced
  • 3 tablespoons olive oil
  • 3 garlic cloves, finely minced
  • 1 tablespoon lemon juice
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red chili flakes (optional)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Toast the sourdough slices until golden and crisp. Set aside.
  2. Heat 2 tablespoons olive oil in a skillet over medium heat. Add mushrooms and cook 5–7 minutes until golden.
  3. Add garlic, cook for 30–60 seconds. Season with 1/2 teaspoon salt, black pepper, and chili flakes if using. Remove from heat.
  4. Mash avocados with lemon juice, remaining 1/4 teaspoon salt, and 1 tablespoon olive oil until smooth but slightly chunky.
  5. Spread mashed avocado over each toast slice.
  6. Top with garlic mushrooms and sprinkle with parsley.
  7. Serve immediately while warm and crisp.
