Ingredients

  • 1 cup unsalted butter, melted
  • 1½ cups light brown sugar
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • ¼ cup Irish cream liqueur (such as Baileys)
  • 1½ cups unsweetened cocoa powder
  • ¾ cup all-purpose flour
  • 1 teaspoon espresso powder (optional)
  • ½ teaspoon salt
  • For the frosting (optional):
  • ½ cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • 24 tablespoons Irish cream liqueur (as needed)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×9-inch square baking pan with parchment, leaving overhang for easy removal.
  2. In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition. Stir in the Irish cream liqueur (and vanilla if using).
  4. Sift in cocoa powder, flour, espresso powder (if using), and salt. Gently fold until just combined.
  5. Pour batter into prepared pan and spread evenly. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Cool completely in the pan on a wire rack.
  7. For the frosting (optional): Beat butter until creamy, then gradually add powdered sugar and Irish cream until desired consistency is reached. Spread over cooled brownies.
  8. Lift brownies from the pan using parchment overhang, slice into squares, and serve.
