Ingredients

1 head cauliflower, cut into florets

3/4 cup all-purpose (or gluten-free) flour

3/4 cup water

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/2 cup hot sauce

2 tbsp butter or vegan butter, melted

1 tbsp lemon juice

Ranch or blue cheese dressing, for serving

Celery and carrot sticks, for serving

Instructions

  1. Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper or grease lightly.
  2. In a bowl, whisk together flour, water, garlic powder, paprika, salt, and black pepper until smooth.
  3. Add cauliflower florets to the bowl and toss to coat thoroughly.
  4. Arrange coated florets in a single layer on the baking sheet. Bake for 20–25 minutes, flipping halfway through.
  5. Meanwhile, mix hot sauce, melted butter, and lemon juice in a separate bowl.
  6. Remove cauliflower from the oven and brush with buffalo sauce.
  7. Return to oven and bake for an additional 15 minutes until golden and crisp.
  8. Serve immediately with ranch or blue cheese dressing and veggie sticks.
