Ingredients

  • 240 g digestive biscuits, finely crushed (about 16 biscuits)
  • 110 g unsalted butter, melted
  • 400 g cream cheese, softened
  • 200 g plain yogurt, unsweetened, room temperature
  • 67 g granulated sugar (about 1/3 cup)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons plain flour
  • 1 1/2 tablespoons freshly squeezed lemon juice

Instructions

  1. Crush the digestive biscuits into fine crumbs and mix with melted butter until it resembles wet sand.
  2. Line a cupcake pan with 12 liners. Spoon about 2 tablespoons of the biscuit mixture into each and press firmly. Chill while making the filling.
  3. In a large bowl, whisk cream cheese, yogurt, sugar, and vanilla until smooth. Add lemon juice and mix just until combined.
  4. Lightly beat the eggs, then gently whisk into the cheese mixture. Avoid over-mixing.
  5. Sift in the flour and gently fold with a spatula until just incorporated.
  6. Spoon batter over the biscuit bases, filling each liner and smoothing the tops.
  7. Bake at 150°C for 17 minutes. The centers may appear soft; this is ideal.
  8. Turn off the oven, crack the door open, and leave the cupcakes inside for 5 minutes.
  9. Cool completely at room temperature, then refrigerate for at least 5 hours or overnight.
