Ingredients

  • 4 boneless skinless chicken breasts
  • 500 g potatoes, peeled and cut into cubes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 200°C (400°F) and lightly grease a large baking dish.
  2. Add cubed potatoes to the dish. Drizzle with half the olive oil and season with half the salt, pepper, paprika, oregano, onion powder, and garlic powder. Toss to coat.
  3. Place chicken breasts on top of the potatoes. Drizzle with remaining olive oil and season with remaining spices. Sprinkle minced garlic evenly over the dish.
  4. Cover with foil and bake for 30 minutes.
  5. Remove foil and continue baking for 20 minutes, until chicken is cooked through and potatoes are tender.
  6. Sprinkle mozzarella and cheddar cheese evenly over the top.
  7. Return to the oven uncovered for 10 minutes, until cheese is melted and bubbly.
  8. Garnish with chopped parsley and serve hot.
