Ingredients

  • 2 cups cornflakes, crushed

  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • 1 ½ pounds chicken breast tenderloins

  • For the Hot Honey:
  • 1/3 cup honey
  • 12 tablespoons hot sauce
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon chipotle chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Pinch of sea salt
  • Fresh thyme, cilantro, or parsley for serving

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a food processor, crush cornflakes with paprika, onion powder, and garlic powder. Transfer to a shallow bowl and mix in Parmesan cheese.
  3. In another bowl, whisk together eggs and hot sauce.
  4. Dip each chicken tenderloin into the egg mixture, then coat with the cornflake mixture. For extra crunch, repeat for a second layer.
  5. Place coated chicken on the prepared baking sheet. Drizzle lightly with olive oil.
  6. Bake for 25 minutes or until golden brown and crispy.
  7. While the chicken bakes, combine honey, hot sauce, cayenne, chipotle chili powder, garlic powder, onion powder, and sea salt in a small saucepan. Warm over low heat for 2–3 minutes.
  8. Drizzle hot honey over the baked chicken and sprinkle with fresh herbs. Serve immediately.
