Ingredients

8 oz block of feta cheese

2 pints cherry tomatoes

½ cup olive oil

34 garlic cloves, minced or smashed

½ teaspoon red pepper flakes (optional)

½ teaspoon salt (adjust to taste)

½ teaspoon cracked black pepper

812 oz pasta (penne, bowtie, or orzo work well)

½ cup reserved pasta water (as needed)

Fresh basil leaves for garnish

Optional: lemon zest, fresh thyme, oregano, balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, garlic, salt, pepper, and red pepper flakes in a baking dish.
  3. Place feta block in the center, turning it to coat with olive oil.
  4. Bake for 35–45 minutes until tomatoes blister and feta softens.
  5. Cook pasta al dente according to package instructions; reserve ½ cup pasta water.
  6. Remove baking dish from oven and stir feta and tomatoes to create a creamy sauce.
  7. Add pasta to the dish and toss, adding pasta water as needed for desired sauce consistency.
  8. Garnish with fresh basil and serve warm.
