Ingredients

  • 24 ounces salmon fillets (about 4 portions)
  • 2 tablespoons melted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Lemon slices, for topping (optional)

Instructions

  1. Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
  2. Melt butter and olive oil together in a small saucepan. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add lemon juice, parsley, dill, salt, and pepper. Stir to combine and remove from heat.
  4. Place salmon fillets on the prepared baking sheet. Spoon the lemon garlic mixture evenly over each fillet.
  5. Optional: Add vegetables like asparagus, broccoli, or zucchini to the pan and drizzle with a little of the sauce.
  6. Bake for 15–20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Garnish with lemon slices and extra herbs before serving.

Notes

  • Use fresh lemon juice for the best flavor.
  • Add lemon zest or a pinch of red pepper flakes for extra zing.
  • Don’t overbake the salmon—check at 15 minutes to prevent drying out.
  • Make it dairy-free by using only olive oil or a vegan butter substitute.
  • Pair with rice, quinoa, or roasted vegetables for a complete meal.
