Ingredients

  • 23 salmon fillets
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • ½ tsp smoked paprika
  • 1 lemon, sliced (for garnish)
  • 2 cups fresh spinach, washed and chopped

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Pat salmon fillets dry with paper towels. Rub with olive oil and season with salt, pepper, and smoked paprika.
  3. Place salmon fillets in a baking dish, skin-side down. Garnish with lemon slices.
  4. Bake for 12–15 minutes, or until salmon is opaque and flakes easily with a fork.
  5. While the salmon bakes, heat a skillet over medium heat. Add a small drizzle of olive oil and sauté the chopped spinach for 1–2 minutes, until wilted. Season lightly with salt and pepper.
  6. Plate sautéed spinach and top with baked salmon fillets. Garnish with baked lemon slices. Serve immediately.

  • Don’t overbake the salmon to prevent it from drying out.
  • Use fresh lemon for best flavor and aroma.
  • Spinach can be chopped ahead but sauté just before serving for freshness.
  • Add a splash of lemon juice or white wine over the salmon before baking for added brightness.
