Instructions

  1. Preheat oven to 415°F (213°C) and line a large baking sheet with parchment paper.
  2. Peel the sweet potatoes, trim the ends, and cut into 1/4-inch thick, 3-inch long matchsticks.
  3. (Optional) Soak the sweet potato sticks in a bowl of ice-cold water for 30 minutes. Drain and pat completely dry.
  4. Toss sweet potato sticks with cornstarch (if using) until lightly coated.
  5. Spread fries on the baking sheet in a single layer. Drizzle with oil and toss to coat evenly.
