Ingredients

  • 3 1/2 cups vanilla wafers
  • 2 tablespoons brown sugar
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 box (3.4 ounces) instant banana cream pudding mix
  • 1/4 cup plain Greek yogurt
  • 16 ounces whipped topping, thawed and divided (8 oz for filling, 8 oz for topping)
  • 2 bananas, sliced

Instructions

  1. Grease a 9-inch springform pan with butter or shortening.
  2. Blend vanilla wafers and brown sugar in a food processor until fine crumbs form.
  3. With the processor running, slowly add melted butter and blend until combined.
  4. Press the crumb mixture firmly into the pan base and freeze for 20 minutes.
  5. In a large bowl, beat softened cream cheese and powdered sugar until smooth.
  6. Add pudding mix and Greek yogurt; mix until fully incorporated.
  7. Fold in 8 oz of whipped topping using low speed until just combined.
  8. Remove crust from freezer and layer sliced bananas over it.
  9. Spoon the cheesecake filling over the bananas and spread evenly.
  10. Top with remaining 8 oz whipped topping and smooth the surface.
  11. Cover loosely and refrigerate for at least 4 hours or overnight.
  12. Before serving, release springform pan and garnish with optional toppings like whipped cream, banana slices, or crushed wafers.

  • Use stabilized whipped cream if substituting for whipped topping.
  • Bananas may slightly darken inside the filling but remain flavorful.
