Instructions

  1. Toast the English muffins until golden and set aside.

  3. To make the Cajun hollandaise, whisk egg yolks and lemon juice in a heatproof bowl over a double boiler until slightly thickened.
  4. Slowly drizzle in melted butter while whisking constantly until sauce becomes smooth and creamy.
  5. Stir in Cajun seasoning, smoked paprika, cayenne if using, and salt to taste. Remove from heat.
  6. Poach eggs in simmering water with a splash of vinegar for 3–4 minutes until whites are set and yolks remain runny.
  7. Assemble: Place lobster mixture on each muffin half, top with a poached egg, and spoon Cajun hollandaise over the top.
  8. Garnish with chopped chives and serve immediately.
