Ingredients

  • 1 tablespoon vegetable oil (such as canola oil)
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • ½ head broccoli, cut into florets
  • 1 pound ground beef (90–93% lean)
  • 6 ounces ramen noodles (2 packets, discard seasoning)
  • Salt and black pepper, to taste
  • 1 scallion, chopped (optional, for garnish)
  • ¼ cup soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons Sriracha
  • 1 clove garlic, minced

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, apple cider vinegar, Sriracha, and garlic. Set aside.
  2. Boil ramen noodles for 2 minutes until just tender. Drain and set aside.
  3. Heat oil in a large skillet over medium heat. Add onion, bell pepper, and broccoli. Sauté for 5 minutes until slightly softened. Remove vegetables from pan.
  4. Add ground beef to the skillet, season with salt and pepper, and cook for 5 minutes until no longer pink. Drain excess fat if needed.
  5. Return vegetables to the skillet with the cooked beef.
  6. Add ramen noodles and pour sauce over everything. Toss to combine well and heat through.
  7. Taste and adjust seasoning. Garnish with chopped scallions and serve warm.

  • Use low-sodium soy sauce to reduce saltiness.
  • Add sesame oil or fresh ginger for extra depth.
  • Swap beef with tofu, shrimp, chicken, or turkey if desired.
