Ingredients

  • 1 lb ground beef (80/20 or leaner)
  • 1 packet taco seasoning (1 oz)
  • ½ cup water
  • 2 cups frozen French fries
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup whole milk
  • 4 large flour tortillas (1012 inch)
  • Salt and black pepper, to taste
  • Cooking spray or oil (for toasting)
  • Optional toppings: sour cream, salsa, jalapeños, lettuce, tomatoes, guacamole, hot sauce

Instructions

  1. Bake or air-fry frozen French fries until crispy and golden. Set aside.
  2. In a skillet, brown ground beef over medium heat, breaking it apart. Drain excess fat.
  3. Stir in taco seasoning and ½ cup water. Simmer 3–4 minutes until thickened. Season to taste.
  4. In a saucepan over low heat, melt cheddar, mozzarella, and milk, stirring until smooth and creamy. Add extra milk if needed.
  5. Warm tortillas in a skillet or microwave until pliable.
  6. Assemble each wrap: layer beef, fries, and drizzle with cheese sauce. Add toppings if desired.
  7. Fold sides, roll tightly, and toast seam-side down in a skillet with oil for 1–2 minutes per side until golden and crisp.
  8. Serve hot, sliced in half if desired, with extra sauce or sour cream.

Notes

  • Don’t overfill the wraps to prevent tearing or falling apart.
  • Use hot taco seasoning or jalapeños for a spicy version.
  • Swap beef with chicken, beans, or mushrooms for variations.
  • Hash browns and eggs make a great breakfast version.
  • Prep beef and cheese sauce ahead; cook fries fresh for best texture.
