Ingredients

  • 12 large eggs, hard boiled
  • 1/4 cup mayonnaise
  • 3 tablespoons sour cream
  • 2 tablespoons pickle relish (preferably dill)
  • 1 1/2 teaspoons yellow mustard
  • Salt and pepper, to taste
  • 1/2 teaspoon smoked paprika (or regular paprika, for garnish)
  • 2 tablespoons diced green onions (for garnish)

Instructions

  1. Place eggs in a pot, cover with water, bring to a boil, then reduce heat and simmer for 10–12 minutes. Transfer eggs to an ice bath for 5 minutes, then peel.
  2. Slice each egg in half lengthwise and remove yolks. Place yolks in a bowl and arrange egg white halves on a serving platter.
  3. Mash yolks with a fork until smooth. Add mayonnaise, sour cream, pickle relish, mustard, salt, and pepper. Stir until well combined and creamy.
