Ingredients

  • 2 large ripe bananas
  • 2 cups rolled oats
  • 2 large eggs
  • 1/3 cup milk (dairy or unsweetened plant-based)
  • 1/4 cup honey or pure maple syrup
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/3 cup chocolate chips
  • Optional: 1/3 cup chopped walnuts or almonds

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly.
  2. Add bananas, oats, eggs, milk, honey or maple syrup, oil, vanilla, baking powder, baking soda, cinnamon, and salt to a blender.
  3. Blend until smooth and the oats are fully broken down.
  4. If using chocolate chips or nuts, stir them into the blended batter by hand.
  5. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  6. Bake for 18 to 22 minutes, or until the tops are set and a toothpick inserted comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas for best sweetness and texture.
  • Do not overblend once the oats are broken down to avoid a gummy texture.
  • Make mini muffins and reduce bake time to 12–14 minutes.
  • These freeze well for up to 3 months—perfect for meal prep.
