Ingredients

  • Cooked chicken breast, shredded or diced: 3 cups
  • Diced smoked turkey or smoked beef: 1½ cups
  • Salt: ½ teaspoon (for chicken layer)
  • Black pepper: ½ teaspoon
  • Garlic powder: ½ teaspoon
  • Onion powder: ½ teaspoon
  • Butter: 4 tablespoons
  • All-purpose flour: 4 tablespoons
  • Warm milk: 3 cups
  • Heavy cream: 1 cup
  • Shredded Swiss cheese: 1½ cups
  • Shredded mozzarella cheese: 1 cup
  • Grated Parmesan cheese: ½ cup
  • Salt: ½ teaspoon (for sauce, or to taste)
  • White pepper: ¼ teaspoon
  • Nutmeg: a small pinch
  • Lasagna sheets: as needed, cooked if required
  • Extra mozzarella or Swiss cheese for topping: 1 to 1½ cups
  • Chopped parsley (optional): 2 tablespoons

Instructions

  1. In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute until bubbling but not browned.
  2. Gradually whisk in warm milk, stirring constantly until the sauce thickens.
  3. Stir in heavy cream, Swiss cheese, mozzarella, Parmesan, salt, white pepper, and nutmeg. Stir until melted and smooth. Remove from heat.
  4. In a bowl, combine cooked chicken, smoked turkey or beef, garlic powder, onion powder, salt, and black pepper.
  5. Preheat oven to 180°C / 350°F and grease a baking dish.
  6. Spread a thin layer of sauce in the bottom of the dish. Layer lasagna sheets, chicken mixture, and more sauce.
  7. Repeat layers, finishing with sauce and extra cheese on top.
  8. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15–20 minutes until golden and bubbly.
  9. Let rest for 10 minutes before serving. Garnish with parsley if desired.

  • Assemble the lasagna ahead of time and refrigerate until ready to bake.
  • Rotisserie chicken works well and adds flavor.
