Ingredients

  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 4 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup milk
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a medium bowl, combine the blueberries, 1/2 cup sugar, cornstarch, lemon juice, and lemon zest. Spread evenly in the prepared baking dish.
  3. In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Stir in melted butter, milk, and optional vanilla until smooth.
  4. Spoon the topping over the berries, allowing some fruit to show through.
  5. Bake for 40–45 minutes, until the topping is golden and fruit is bubbling.
  6. Serve warm with vanilla ice cream or whipped cream, if desired.

Notes

  • Use fresh or frozen blueberries—no need to thaw frozen berries.
  • Substitute other fruits like peaches, blackberries, or mixed berries.
  • Sprinkle coarse sugar on top for added texture.
  • Use gluten-free flour for a gluten-free version.
  • Add cinnamon or nutmeg for extra warmth and depth.
