Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 cup light brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, melted
  • 3 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, combine rolled oats, flour, brown sugar, baking soda, salt, and cinnamon.
  3. Pour in melted butter and mix until crumbly and evenly moistened.
  4. Press two-thirds of the oat mixture firmly into the bottom of the prepared pan to form the crust.
  5. In another bowl, gently mix blueberries, granulated sugar, cornstarch, lemon juice, lemon zest, and vanilla extract.
  6. Spread the blueberry mixture evenly over the crust.
  7. Sprinkle remaining oat mixture over the filling and lightly press down.
  8. Bake for 40 to 45 minutes, until the top is golden brown and the filling is bubbling.
  9. Cool completely in the pan for at least 1 to 2 hours to allow the filling to set.
  10. Lift out using parchment overhang and slice into bars.
