Ingredients

For the Pie:

1 pie crust (both top and bottom)

6 cups fresh blueberries

½ cup granulated sugar

¼ cup brown sugar

¼ cup cornstarch

1 teaspoon lemon zest

1 tablespoon lemon juice

¼ teaspoon salt

½ teaspoon ground cinnamon

2 tablespoons butter (cut into small pieces)

1 egg (beaten for egg wash)

For the Special Sauce:

½ cup mayonnaise

2 tablespoons pickle relish

1 tablespoon yellow mustard

1 tablespoon ketchup

1 teaspoon white vinegar

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon sugar

Instructions

  1. In a large bowl, combine the blueberries, granulated sugar, brown sugar, cornstarch, lemon zest, lemon juice, salt, and ground cinnamon. Gently mix until the blueberries are evenly coated. Let it sit for a few minutes to allow the sugars to dissolve.
  2. Preheat your oven to 425°F (200°C). Roll out one portion of the pie crust and fit it into a 9-inch pie dish. Pour the blueberry filling into the crust and dot with butter pieces.
  3. Roll out the second portion of the pie crust and place it over the filling. You can also create a lattice crust for a decorative touch. Trim any excess dough, crimp the edges to seal, and cut a few slits in the top crust.
  4. Brush the top crust with the beaten egg for a golden finish. Bake at 425°F (200°C) for 25 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 45-55 minutes until the crust is golden and the filling is bubbling. If the edges brown too quickly, cover with foil.
  5. Let the pie cool for at least 2 hours on a wire rack before slicing. Serve warm or at room temperature.
