Ingredients

  • ½ cup low-sodium soy sauce
  • ½ cup packed brown sugar
  • ¼ cup water
  • 2 tablespoons bourbon whiskey
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon black pepper
  • 2 pounds boneless, skinless chicken thighs, trimmed and cut into 1-inch pieces
  • 2 tablespoons cornstarch
  • 2 cups broccoli florets
  • 3 tablespoons vegetable oil, divided
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated

Instructions

  1. In a measuring jug, combine soy sauce, brown sugar, water, bourbon, sesame oil, and black pepper. Microwave or heat on the stove until hot and sugar is dissolved, about 1–2 minutes.
  2. In a bowl, toss chicken pieces with cornstarch and 2 tablespoons of the sauce mixture to coat.
  3. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add broccoli and sauté until bright green and just tender, 2–3 minutes. Remove and set aside.
  4. Heat remaining oil in the same skillet. Add chicken and cook, stirring occasionally, until browned and cooked through, about 8–10 minutes.
  5. Add garlic and ginger to the skillet. Cook for 30 seconds until fragrant.
  6. Pour in the remaining sauce. Bring to a boil, then reduce heat and simmer until thickened and syrupy, about 5–6 minutes.
  7. Return broccoli to the skillet and stir to coat with sauce. Heat through for 1–2 minutes.
  8. Serve hot over steamed rice or your favorite grain.

Notes

  • Substitute bourbon with apple juice for a non-alcoholic version.
  • Use tamari for a gluten-free adaptation.
  • Add extra vegetables like bell peppers, carrots, or mushrooms for variety.
  • If sauce becomes too thick, stir in a splash of water or broth to loosen.
  • Great for meal prep—store in containers with rice for easy lunches.
