Ingredients

  • 12 slices white sandwich bread
  • 8 slices halal turkey breakfast strips
  • 1 pound halal beef or chicken sausage, formed into patties
  • 4 slices mild cheddar cheese
  • 8 large eggs
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 large ripe avocado, pitted, peeled, and sliced
  • 3/4 cup cowboy butter or herb butter, softened

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and arrange turkey strips in a single layer. Bake for 18–22 minutes, turning once, until crisp. Drain on paper towels.
  2. Divide sausage into 4 patties, slightly larger than bread slices. Cook in a skillet over medium heat for 3–4 minutes per side until browned and cooked through. Add cheese slices on top during final minute to melt.
  3. Wipe skillet clean. Melt butter over medium heat. Beat eggs with salt and pepper, then pour into skillet. Stir gently to form soft curds and cook until just set. Remove from heat.
  4. Toast all bread slices until golden. Spread softened cowboy or herb butter on one side of each slice.
  5. To assemble: Place one buttered toast slice on a plate. Top with sausage patty and cheese, then a second slice of toast. Layer with 2 turkey strips, avocado slices, and scrambled eggs. Top with final slice of toast.
  6. Press gently, slice into triangles if desired, and serve warm.
