Ingredients

  • 1 cup uncooked white long-grain rice
  • 2 cups water
  • 2 cups cooked chicken, shredded or diced
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup whole milk
  • 1 small white onion, finely diced
  • 2 cups broccoli florets, chopped
  • 2 tbsp unsalted butter, melted
  • 2 cups shredded sharp cheddar cheese, divided
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a saucepan, bring 2 cups of water to a boil. Add rice, cover, and simmer 15 minutes until cooked. Fluff with fork and set aside.
  3. In a large bowl, combine cooked rice, chicken, cream of chicken soup, cream of mushroom soup, milk, melted butter, onion, and broccoli. Stir well.
  4. Mix in 1 cup cheddar cheese.
  5. Transfer mixture to prepared baking dish and spread evenly.
  6. Bake for 30–35 minutes, until hot and bubbling.
  7. Sprinkle remaining 1 cup cheddar on top. Return to oven for 5–7 minutes, until melted and lightly golden.
  8. Let rest 5 minutes before serving.
