Ingredients

½ cup (1 stick) unsalted butter

1 cup packed brown sugar

2 ripe bananas, mashed (about 1 cup)

2 large eggs

1 teaspoon vanilla extract

1¼ cups all-purpose flour

½ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a light-colored saucepan, melt the butter over medium heat. Stir frequently until the butter foams, then turns golden brown with a nutty aroma. Remove from heat and let cool slightly.
  3. In a large bowl, whisk the brown sugar into the browned butter until smooth.
  4. Add eggs and vanilla extract and whisk until glossy and well combined.
  5. Stir in mashed bananas until evenly incorporated.
  6. Gently fold in the flour and salt until just combined—do not overmix.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25–35 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Let the blondies cool completely in the pan before slicing into squares.

Notes

  • For deeper banana flavor, use very ripe bananas or add a third banana.
  • Stir in ½ cup chopped walnuts, pecans, or chocolate chips for extra texture.
  • Swirl reserved browned butter on top before baking for added richness.
  • Blondies are best stored at room temperature for 3 days or frozen for up to 2 months.
  • Reheat individual slices in the microwave for 10–15 seconds for a just-baked taste.
