Ingredients

  • 1 1/2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter, softened (55 g, for filling)
  • 4 oz cream cheese, softened (115 g)
  • 1/4 cup unsalted butter, softened (55 g, for frosting)
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup powdered sugar (125 g)

Instructions

  1. Brown the butter: Melt 1/4 cup butter in a saucepan over medium heat until it turns amber and fragrant. Transfer to a bowl and let cool completely.
  2. Warm the milk to 110°F (43°C). In a stand mixer bowl, combine milk, yeast, sugar, eggs, and cooled brown butter. Mix briefly to combine.
  3. Add flour and salt. Mix until a shaggy dough forms. Knead with dough hook on medium speed for 8 minutes, until smooth and elastic.
  4. Transfer dough to a lightly oiled bowl, cover, and let rise for 1 to 1.5 hours, or until doubled in size.
  5. Roll dough out into a 14 x 9 inch rectangle on a floured surface. Spread softened butter evenly over the dough. Mix brown sugar and cinnamon, then sprinkle over butter and press in gently.
  6. Roll the dough tightly from the short side into a log. Trim ends and cut into 9 equal pieces. Place in a parchment-lined 9×9 inch baking pan. Cover and let rise 30–45 minutes.
  7. Preheat oven to 350°F (180°C). Bake rolls for 23–35 minutes, until lightly golden on the edges and soft in the center.
  8. Make frosting: Beat cream cheese, butter, vanilla, and salt until smooth. Gradually add powdered sugar and beat until creamy.
  9. Let rolls cool 5–10 minutes, then frost and serve warm.
