Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 cup very cold unsalted butter, cut into cubes
  • 1/2 cup ice water (as needed)
  • 3/4 cup granulated sugar
  • 1/3 cup light brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1/3 cup old-fashioned rolled oats
  • 1/3 cup pecans, roughly chopped
  • 8 tablespoons unsalted butter, browned and melted
  • 7 cups Granny Smith apples, peeled, cored, and thinly sliced
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1/3 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 3 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 tablespoons cornstarch

Instructions

  1. In a food processor or bowl combine flour, sugar, and salt for the crust.
  2. Add the cold butter cubes and cut into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces.
  3. Gradually add ice water one tablespoon at a time until the dough begins to come together.
  4. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. In a bowl mix granulated sugar, brown sugar, flour, oats, and chopped pecans for the crumb topping.
  6. Stir in the browned butter until a crumbly mixture forms and chill until ready to use.
  7. In a large bowl toss sliced apples with apple cider vinegar and vanilla extract.
  8. In another bowl combine brown sugar, granulated sugar, cinnamon, nutmeg, and cornstarch then mix with the apples.
  9. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish.
  10. Roll one dough disk into a 12-inch circle and place it into the pie dish, trimming or crimping the edges.
  11. Sprinkle 1 teaspoon flour over the crust bottom to absorb moisture.
  12. Add the apple filling and spread evenly.
  13. Sprinkle half of the crumb topping over the apples.
  14. Bake for 30 minutes.
  15. Reduce oven temperature to 350°F (175°C), rotate the pie, and add the remaining crumb topping.
  16. Continue baking for 30 to 35 minutes until golden brown.
  17. Allow the pie to cool on a wire rack for at least 6 hours before slicing.

  • Thinly sliced apples cook more evenly and create a tender filling.
  • Mix different apple varieties such as Honeycrisp or Fuji for a sweeter flavor.
