Ingredients

  • 7 slices brioche bread, cut 3/4-inch to 1-inch thick
  • 5 large eggs
  • 1/4 cup milk or half-and-half
  • 1/4 cup brown sugar, packed
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 2 tablespoons butter, for cooking
  • Fresh strawberries, for serving
  • Fresh blueberries, for serving
  • Whipped cream, for serving
  • Maple syrup, for serving
  • Confectioners sugar, for serving

Instructions

  1. In a large shallow bowl, whisk together eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth and well combined.
  2. Heat a non-stick skillet or griddle over medium-low heat and add a bit of butter to coat the surface.
  3. Dip each slice of brioche into the custard for 2–3 seconds per side, letting it absorb some liquid without getting soggy.
  4. Place the soaked bread on the skillet and cook for 2–4 minutes on each side, until golden brown and lightly caramelized.
  5. Repeat with remaining slices, adding more butter as needed.
  6. Serve warm with fresh berries, whipped cream, maple syrup, and a dusting of confectioners sugar.

Notes

  • Use almond, oat, or coconut milk for a dairy-free version.
  • Try challah, French bread, or sandwich bread instead of brioche.
  • Add cardamom or allspice for extra spice depth.
  • Substitute coconut sugar or maple syrup for brown sugar.
  • Turn into stuffed French toast by adding cream cheese and fruit between slices.
  • Store leftovers in fridge for 2 days or freeze for up to 1 month.
  • Reheat in skillet, toaster oven, or microwave with a damp paper towel.
