Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-inch baking dish.
  2. In a bowl, combine the sliced peaches and brown sugar and gently toss to coat.
  3. Add the lemon juice, vanilla extract, arrowroot starch, and salt. Mix until the peaches are evenly coated.
  4. Transfer the peach mixture to the prepared baking dish and spread evenly.
  5. In another bowl, whisk together the flour, oats, brown sugar, cinnamon, ginger, and salt.
  6. Add the softened butter and work it into the dry ingredients with your fingers or a fork until coarse crumbs form.
  7. Sprinkle the crumble topping evenly over the peaches.
  8. Bake for 45–55 minutes until the topping is golden brown and the fruit juices are bubbling around the edges.
  9. If the topping browns too quickly, loosely cover the dish with foil.
  10. Remove from the oven and allow the crumble to cool for at least 15 minutes before serving.
  11. Serve warm with vanilla ice cream if desired.
