Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 tbsp reserved chickpea liquid
  • 3 tbsp coconut oil, melted
  • 2 tsp vanilla extract
  • 1/2 cup creamy peanut butter
  • 2/3 cup brown sugar
  • 1/4 cup cocoa powder
  • 1/4 tsp salt (or to taste)
  • 1/3 cup chocolate chips

Instructions

  1. Add chickpeas and 2 tbsp of the reserved liquid to a food processor. Blend until smooth.
  2. Add peanut butter, melted coconut oil, and vanilla extract. Blend until combined.
  3. Add brown sugar, cocoa powder, and salt. Blend again until fully incorporated.
  4. Stir in the chocolate chips by hand.
  5. Serve immediately or chill and serve later with fruit, crackers, or pretzels.

Notes

  • Use almond or sunflower seed butter for a nut-free version.
  • Dark cocoa powder adds a richer chocolate flavor.
  • Reduce brown sugar and replace with maple syrup for a less sweet option.
  • Fold in mini marshmallows or crushed cookies for added texture.
  • Let chill at room temp for 30 minutes before serving if made ahead.
