Ingredients

1 cup flour

1 cup milk (dairy or non-dairy)

¼ teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon pepper

1 head cauliflower (45 cups florets)

¾ cup hot sauce (Frank’s-style preferred)

3 cups shredded cabbage or slaw mix

2 tablespoons chopped fresh cilantro

10 tortillas (corn or flour)

Avocado Crema:

2 avocados

1 clove garlic

¼ cup sour cream or yogurt (dairy or vegan)

¼ cup water

½ teaspoon salt

Splash of lemon or lime juice

Instructions

  1. Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, milk, garlic powder, salt, and pepper to form a smooth batter.
  3. Dip cauliflower florets into the batter, letting excess drip off, and place them on the prepared baking sheet.
  4. Bake for 15–20 minutes, or until lightly browned.
  5. Remove from oven, toss cauliflower in buffalo sauce until well coated, then return to the baking sheet and bake an additional 5–10 minutes until crisp and saucy.
  6. While cauliflower bakes, blend avocado, garlic, sour cream/yogurt, water, salt, and citrus juice until smooth to make the avocado crema.
  7. In a bowl, toss some of the avocado crema with the slaw mix until lightly coated.
  8. To assemble tacos: Warm tortillas, fill each with creamy slaw, buffalo cauliflower, a drizzle of extra crema, and a sprinkle of cilantro.
  9. Serve immediately and enjoy.
