Ingredients

  • Pastry Crust:
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • ⅓ cup cold water
  • Butter Tart Filling:
  • 1 cup packed brown sugar
  • ½ cup golden corn syrup
  • ¼ cup salted butter, melted
  • 2 large eggs
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • ½ cup raisins or pecans (optional)

Instructions

  1. In a bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  2. Add cold water a tablespoon at a time until dough just comes together. Form into a disc, wrap, and chill for 1 hour.
  3. Preheat oven to 350°F (175°C). Roll out dough and cut into 3½-inch rounds. Press into a 12-cup muffin tin. Freeze for 10 minutes.
  4. In another bowl, whisk together brown sugar, corn syrup, melted butter, eggs, vinegar, and vanilla until just combined.
  5. Place raisins or pecans (if using) into tart shells. Fill each shell two-thirds full with the filling.
  6. Bake for 20–25 minutes, until the filling is puffed and the pastry is golden. The center should still jiggle slightly.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use dark brown sugar for a richer flavor.
  • Add a pinch of cinnamon to the filling for warmth.
  • Do not overmix the filling to avoid puffing and sinking.
  • Chill tart shells before filling to prevent soggy bottoms.
  • Can be made ahead and stored in the fridge or freezer.
