Ingredients

  • 12 large eggs
  • 1 tsp salt (optional, for boiling)
  • 1 tsp vinegar (optional, for boiling)
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tsp Cajun seasoning (plus extra for garnish)
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 12 small cooked shrimp, peeled and deveined
  • Chopped green onions, for garnish

Instructions

  1. Place the eggs in a pot of cold water. Add salt and vinegar if using. Bring to a boil, then reduce heat and simmer for 10 minutes.
  2. Transfer eggs to an ice bath and cool completely. Peel and slice each egg in half lengthwise.
  3. Remove yolks and place in a bowl. Mash with mayonnaise, Dijon mustard, lemon juice, Cajun seasoning, paprika, salt, and pepper until smooth.
  4. Spoon or pipe the yolk mixture back into the egg white halves.
  5. Top each filled egg with a cooked shrimp.
  6. Sprinkle with extra Cajun seasoning and garnish with chopped green onions. Serve chilled.
